Orange, Ginger and Pecan Loaf Cake
Orange, Ginger and Pecan loaf cake, made with Woodcrest Kitchen Seville Orange Marmalade:
This is a quick and easy recipe with a delicious outcome! A moist loaf, perfect with a cup of tea!
200g butter200g light brown sugar200g self raising flour4 eggs150g Woodcrest Kitchen Seville Orange Marmalade80g chopped stem ginger80g chopped pecans2tbs marmalade for glaze1. Cream together the butter and sugar.
2. Add the eggs one at a time and mix thoroughly after each addition (adding a spoonful of flour if the mixture begins to curdle).
3. Add the remaining ingredients and gently mix until combined.
4. Tip the mixture into a loaf tin and bake for about 1hr at 160 degrees or until the skewer comes out clean.
5. Warm a couple of tablespoons of marmalade in a pan and brush over the top of the warm loaf, using some of the peel to decorate.
