Marmalade, Cranberry and Ginger Flapjack.

 

Marmalade doesn’t just have to be used on toast, try it as a glaze for chicken, on top of a steamed sponge pudding or in this delicious recipe; a ‘grown up’ tasting flapjack based on a childhood classic! It not only tastes great, it’s really quick and easy to make too!

 

200g butter

100g soft light brown sugar

70g golden syrup

1tsp ground ginger

200g Woodcrest Kitchen Bitter Seville Orange Marmalade*

100g dried cranberries

400g porridge oats

 

1. Heat the oven to 170 Degrees Celsius.

 

2. Melt together the butter, sugar and golden syrup in a large pan on the hob.

 

3. Stir in the ground ginger and marmalade then add the porridge oats and cranberries to the pan. Mix until combined.

 

4. Tip the mixture into a lined baking tin (approx. 20cm square).

 

5. Bake at 170 Degrees Celsius for 25 minutes or until lightly browned.

 

6. Leave to cool and slice into portions.

 

* This recipe has only been trialled with Woodcrest Kitchen Bitter Seville Orange Marmalade. Other homemade marmalades should work too, as typically they have a softer set than the more ‘stodgy’ mass produced versions. The recipe hasn’t been trialled with the latter and therefore homemade marmalade is recommended.
